Are you looking for a hardy and rich dish to bring to your next potluck? Try this amazing spinach ricotta pie. It is easy to make and oh so delicious! Serve in a nice ceramic dish and you will wow your guests. Even the little ones will dig into the creamy, egg center. They won’t even know that it is good for them (spinach strengthens immunity, the heart, the bones and brain function).


1 unbaked pie shell

1 pkg. (12 oz.) chopped spinach- thawed

1 tablespoon butter

1/4 cup diced yellow onionfresh spinach leaves

¾ cup half and half

2 large eggs

2 tsp. Lawry’s seasoning salt

1/8 tsp. cayenne

1/8 tsp. nutmeg

1/8 tsp. pepper

One 8 oz. container of ricotta cheese

Bake shell 10 minutes in 425 degree oven. Drain spinach well. Cook onion in butter for three minutes until translucent. Add cream and scald. Beat eggs and seasonings. Blend in ricotta and cream mixture. Pour into pie shell and bake for 35 minutes. If not set, give it another few minutes and check frequently. Cool.
