This is a dessert that you can literally whip up in a few minutes. If an unexpected guest drops by, you can treat them to a little bit of heaven! After you taste this yummy dessert, you may want to make one for yourself, after the kids are in bed.

  • Pam non-stick cooking spray
  • 1 tablespoon apricot jam
  • 1 tablespoon brown sugar
  • 2 tablespoons crushed pineapple pieces
  • ¼ cup cake flour
  • 3 tablespoons white sugar
  • 3 egg whites
  • ¼ teaspoon cream of tarter
  • ½ teaspoon vanilla

Lightly spray 2 microwavable large coffee mugs with cooking spray. Mix jam, brown sugar and pineapple pieces together. Put equal amounts of jam mixture in each mug. In a separate bowl, sift flour and white sugar together; set aside. In a new bowl, beat egg whites until foamy. Whip in the cream of tartar. Gently stir in vanilla, then the flour mixture. Put equal amounts in both mugs. Microwave on HIGH for 3 minutes. Turn onto a dessert plate and serve warm.
