Summer may be over, but you can still have a little taste of sunshine! These yummy little cheesecakes are simple to make, yet look and taste delicious! Even your pickiest eaters will lick the plate! These sun shaped treats can be dressed up for a special occasion, or served to your family after a long busy day! Bring back memories of lazy days by the lake and blue skies! They are sure to put a smile on anyone’s face!
- 8-10 crushed ginger snaps
- Three tablespoons melted butter
- Three crushed graham crackers
- 1 8-ounce package cream cheese
- ¼ cup sugar
- 1 egg
- ¼ teaspoon lemon extract
- ¼ cup sour cream
- ¼ cup whipping cream
- The zest from two lemons
- 1 small container of Cool Whip
- ½ package instant lemon pudding
- Crushed lemon drops for topping
Heat the oven to 300 degrees. Line muffin tins with aluminum baking cups. Spray the inside with Pam spray. Blend crushed cookies and butter together. Line and press down cookie mixture in the muffin cups. In a bowl, beat together all the ingredients for the filling. Pour into cups and bake for 30 minutes. Let cool then refrigerate. Gently fold pudding mix with the cool whip. Put a healthy dab on each little cake. Sprinkle with crushed lemon drops and enjoy.
