OK. So Christmas is over and you still have a half gallon of eggnog in your refrigerator. You don’t want to throw it out, yet the thought of drinking the thick concoction is not a pleasant one. We have a delicious cake recipe that can help ring in the New Year with style. It has a creamy rich flavor that is sure to wow even your most discriminating guests.


1 box white cake mix

3 eggs

1 cup eggnog

1 tbs. rum extract

½ tsp. pumpkin pie spice

Cream Topping:

¾ cup half and half

¼ cup eggnog

1 box Jell-O brand 3.4 OZ vanilla pudding mix

1 8oz. container of Cool Whip

1 cup powdered sugar


Preheat oven to 350 degrees. Blend cake mix, eggs, eggnog, extract and spices until smooth. Spray Bundt cake pan with cooking spray and dust with flour. Pour cake batter into pan and bake for 25 minutes. Loosen sides with a knife and turn out onto a nice serving dish.

To make the cream topping, mix together the half and half with the powdered sugar, pudding mix and eggnog. Gently fold in the Cool Whip and refrigerate. Let set for about thirty minutes, and then spoon generously over each slice of cake. You may want to dust each slice with a touch of nutmeg.
