A few years ago my brother-in-law decided to tie-the-knot. He and his soon-to-be wife did not have a lot of money so they decided to forgo the wedding cake. At the time I thought what…no wedding cake, how are they going to do that. Well, they asked for the help of family to make desserts for their special day and had a dessert bar instead. This is how I came upon the recipe for gooey pumpkin cheesecake bars, and I’m really glad I did and you will be too. This recipe is from one of my favorites, Paula Deen, so right there you know lots of butter and deliciousness. There are lots of variations on this recipe (so try your own), but this is what I found that works best for my family.
1 yellow cake mix ( yep, a box cake mix)
8 Tbls. melted butter
Spread in bottom of sprayed 9×13 pan, set aside
1 pkg. soft cream cheese
1 can (15oz.) pumpkin, this is the pure pumpkin not the pie mix
2 tsp. vanilla
1/2 tsp. nutmeg
2 tsp. cinnamon
8 Tbls. Melted butter
Spread over mix
Bake 50min, center will be a little gooey
Note: One word of caution, this dessert is so good you might want to make two, as the first might be gone as soon as it comes out of the oven. Enjoy, I hope it becomes a household favorite.
